1. Boneless Skinless Chicken Breasts (2 large breasts)
2. Flour (1/2 cup)
3. Eggs (2)
4. Breadcrumbs (1 cup)
5. Homemakerz Grill Salt (2 tablespoons)
6. Sesame Seeds (1 tablespoon-optional)
7. Oil (for frying)
8. Fresh Lemon Wedges (for garnish)
Step 1. Lay the chicken breast on cutting board with smooth side facing upward. Identify the thickest round edge of the breast. Place your hand flat on the top of the breast. Slice carefully horizontally into the thickest round edge, and divide the breast into two pieces. When finished you will get 4 breasts of relatively equal size. Do pound the breasts thin for uniform cooking.
Step 2. Marinate the chicken breasts in Homemakerz Grill Salt for a minimum of 30 minutes.
Step 3. Take 3 wide & shallow bowls, place flour in the first bowl. In the second bowl, beat the eggs together with 2 tsp of water until well mixed. In the third bowl, stir together the breadcrumbs and sesame seeds (optional) until well blended.
Step 4. Pour oil into a wok or sauté pan until it’s deep enough for frying. Heat the oil slowly over medium heat. While oil is heating, dip each breast one by one into your bowls—first dredge with flour. Next, dip the floured breast in egg until well coated. Finally, place the egg-covered breast into the bowl of breadcrumb mixture. Use a dry hand to coat the breast evenly with breadcrumbs. Repeat process for remaining breasts.
Step 5. Fry the coated breasts in single-layer batches until they are golden brown on both sides. It should take about 2-3 minutes per side to cook the schnitzels.
Step 6. Drain the excess oil & serve hot with fresh lemon wedges.
