Indian-Style Light Makhani Macaroni

A lighter take on the classic makhani sauce made with fresh tomatoes and cashews. This macaroni dish brings familiar Indian flavours in a clean, balanced, and modern way.

Ingredients
Homemakerz Macaroni Pasta (One packet of your choice)
Tomatoes (4 large, pureed)
Cashews (12, soaked)
Ginger (1 teaspoon, grated)
Garlic (3 Cloves)
Kashmiri Chilli Powder (½ teaspoon)
Garam Masala (¼ teaspoon)
Olive Oil (1½ tablespoon)
Salt to taste
Method
Step 1. Blend soaked cashews into a smooth paste.
Step 2. Cook macaroni till al dente.
Step 3. Heat oil, sauté ginger and garlic.
Step 4. Add tomato puree and cook till oil separates.
Step 5. Add cashew paste, chilli powder, salt and garam masala.
Step 6. Add pasta and a little pasta water, toss gently.
Step 7. Simmer 2 minutes and serve.
