Smoky Roasted Capsicum & Tomato Penne

Fire-roasted capsicum and ripe tomatoes come together in a naturally smoky, robust sauce. This penne dish is rich, comforting, and packed with deep, slow-cooked flavour—without any heaviness.

Ingredients

  1. Homemakerz Penne Pasta (One packet of your choice)

  2. Red Capsicum (2 large, roasted & peeled)

  3. Ripe Tomatoes (3, chopped)

  4. Garlic (6 cloves)

  5. Olive Oil (2 tablespoon)

  6. Smoked Paprika (½ teaspoon)

  7. Chilli Flakes (½ teaspoon, optional)

  8. Salt & Cracked Black Pepper to taste

  9. Fresh Basil or Parsley for garnish

Method:

Step 1. Cook penne in salted boiling water till al dente. Reserve ½ cup pasta water and drain.

Step 2. Roast capsicum directly on flame or in oven till charred. Peel, deseed and blend coarsely.

Step 3. Heat olive oil, sauté garlic till fragrant.

Step 4. Add tomatoes and cook till soft and pulpy.

Step 5. Stir in roasted capsicum paste, smoked paprika, salt and pepper. Cook 5–7 minutes.

Step 6. Add cooked pasta and a splash of pasta water. Toss till well coated.

Step 7. Finish with herbs and serve warm.
