Spinach & Walnut Pesto Penne

Fresh spinach and walnuts are blended into a vibrant, nutrient-rich pesto. Tossed with penne, this dairy-free recipe is earthy, wholesome, and full of natural flavour.

Ingredients
Homemakerz Spinach Penne Pasta (One packet)
Spinach (2 cups)
Walnuts (¼ cup)
Garlic (2 cloves)
Olive Oil (¼ cup)
Lemon Juice (1 tablespoon)
Salt to taste
Method
Step 1. Blanch spinach briefly and squeeze dry.
Step 2. Blend spinach, walnuts, garlic, olive oil, lemon juice and salt.
Step 3. Cook penne till al dente.
Step 4. Toss pasta with pesto and reserved pasta water.
Step 5. Serve immediately.
